Full crust & melted Cheddar. Nothing tastier than a piece of warm apple pie with a slice of melted sharp Cheddar, on top. Might sound odd to some, but if you've ever had a cheese & fruit platter you know how nicely fruit pairs with cheese - sweet & savory is a nice combination. Tried apple pie with Cheddar at my friend's house in Vermont and fell in love with it.
I didn't include it on the poll, but I also like apple pie with a shake of cinnamon or apple pie spice on it.

My Dad had 2 restaurants back in the 60s in Colorado. It was the same year Pres. Kennedy was killed in 1963. We were living in Iowa. There was an older male customer that would come into Hansen's and order apple pie and melted cheddar on top. Dad didn't stay in the restaurant business because of too many long hours and too much of a turnover. He was always bailing the cook out of jail. He was a great cook, just drank too much. lol He made the best cinnamon rolls in the morning and his fried chicken was to die for. We didn't move to Colorado, but I am in CO now because my husband wanted to move here. It was a good move and wish he were still here.

The cheese thing sounds odd, but I do love sharp cheddar with freshly-sliced apple, so maybe I should try cheese on my apple pie next time.
